Chunky Nut & Date Muesli
3 cups rolled oats
2 cups mixed nuts (walnuts, almonds, cashews, Brazil nuts, etc.), roughly chopped
1-2 tbsp ground cinnamon
1/3 cup rice bran oil (or other neutral flavoured oil)
1/3 cup honey
1 1/2 cups dates, cut in half
Preheat oven to 180 degrees Celsius.
Combine oats, nuts, cinnamon, oil, and honey in a bowl.
Spread onto a lined baking tray and bake in oven for 15 minutes, or until nice and toasty.
Take muesli out of oven, sprinkle dates on top and leave to cool for at least 10 minutes.
Break up muesli chunks with your hands or a spoon and store in a sealed container or jar.
Serve with yoghurt, milk, fresh fruit, protein powder or shake for a nutritious and filling breakfast!
